Our Smoked Corn & Hominy Stew, like many of our recipes is inspired by the gardens of Colonial Williamsburg and made fresh with locally sourced ingredients. Now, you can try this recipe at home!
Smoked Corn & Hominy Stew
Yield: 1 ½ gallon
Thai Coconut Milk 2 qts
Vegetable Stock 2 qts
Hominy 1 qt
Smoked Corn, cleaned 1 qt
Collards, Cleaned and cut 3 qts
Tobasco TT
Olive Oil 2 Tbsp
Salt and Pepper TT
- In a large stockpot add the olive oil.
- Heat and add the collards and sweat down. Add the corn and hominy.
- Sweat down then add the coconut milk and stock.
- Allow to simmer for 1 hour.
- Adjust seasoning and add tabasco TT.
